Chef Alessandro Frau and partner Marcella Mocci, opened Acqua Bangkok in late 2022 in Soi Somkid. Since its launch, this tribute to modern Italian cuisine has firmly established itself in the competitive Bangkok dining landscape. The ambiance is chic but exuding relaxed informality. The cuisine concept embraces classic recipes reinvented with contemporary sophisticated touches. Begin with signature 55-minute slow-cooked egg, sitting in a Parmigiano Reggiano fondue with shavings of black truffle to add earthiness, and dusted with crispy pancetta powder. Another highlight is artichoke salad with bottarga, celery and fresh sheep milk ricotta cheese, drizzled with fine extra virgin olive oil. Raw Sicilian red prawns, Rosso di Mazara, possibly the finest prawns in the world, are dressed in smoked mozzarella cream, Sardinian sea urchin and Siberian caviar. Pastas are not to be missed as is risotto made with aquerello, aged carnaroli rice. Main courses of veal loin wrapped in parma ham and roasted quail with foie gras are standout culinary gems. Chef Alessandro’s wine list is a labour of love, featuring an incredible number of premium Italian wines worthy of recognition.
