Globally renowned chef and entrepreneur Simon Rogan MBE opened Aulis in Thailand in 2023 at the boutique Iniala Beach House Hotel in Phang Nga. The kitchen is helmed by amiable chef Charlie Wilson and his team, who engage a maximum of fifteen diners across the spectacular dining table. As with other Aulis’ chef tables, the menu champions hyper-local ingredients. Arriving at the hotel, you will be accompanied into a comfortable lounge for aperitif and beginning bites, including refreshing papaya and pomelo tartlet with pomfret, whipped oyster and finger lime, and truffle pudding caramelised in banana molasses, with black garlic and shaved truffle. Then through to the dining room/kitchen where the scene is set for a magical evening with diners facing the kitchen and the culinary team. Plates flow, including smoked trevally roe on roasted chicken skin, raw river prawn in buttermilk with smoked Hua Hin caviar, and Phang Nga squid in a balanced broth infused with roasted onion and anise. Main of 42-day aged Khon Kaen wagyu striploin in a glossy Mitsuba and mulberry vinegar sauce stands out. Dessert also impresses with Kiew Kamin mango, bee pollen, chamomile cake, iced coconut, and cream. Both a wine and soft pairing are available.
