Mia is Pongcharn “Top” Russell and partner Michelle Goh’s tribute to modern European cuisine, which has continued to flourish since its opening in 2019. The dining experience delights with premium ingredients, amusing anecdotes, and meticulous attention to dish detail. Their wine pairing is game-leading, offering rare finds and in-synch marriages of liquor and dish. The menu begins with elegant and original amuse-bouches. First up, ostra regal oyster bloody mary, a nod to chef Top’s mornings at Borough market, following a lively late night. Another favourite is delicate flying fish taramosalata tart. These are followed by Mia’s sourdough brioche with shallot butter, coated with onion ash, a now iconic course. Other signatures include Andaman sea crab in ajo blanco accompanied by a memorable pairing with soii nama sake from Chiang Mai. This is followed by a complex combination of Hokkaido scallop with bluefin tuna bathed in truffle ponzu, topped with N25 caviar, and served with white Italian Sangiovese. Highlights of roasted baby chicken stuffed with boudin blanc and foie gras in an exceptionally accomplished creamy Albufera sauce and slow-roasted lamb saddle with an equally impressive jus are faultlessly executed. Desserts, chef Michelle’s domain, continue to hit the heights with her signature cereal bowl, a new Borneo vanilla mousse with roasted barley and black truffle, and an unmissable add-on of coconut and caviar.
