Begin with traditional miso soup or an elegant Dobin mushi, served from a Dobin teapot, with shrimp, chicken, soy sauce, lime, and matsutake mushroom. Delicate slices of sashimi and nigiri, and an extensive list of sushi and hand rolls with seasonal specials, are abundant. Yaki Mono grilled dishes are executed with panache for those less keen on the raw menu. Try unagi kanayaki for a perfectly balanced sweet-umami dish or richly comforting gyuniku with juicy melt-in-the-mouth beef. For a classic but exceptional precision-executed dish, choose kaizen ramen noko soup, a perfect soul-warming bowl of noodles in a flavourful broth.
