Thien Duong to welcome guest chef Didier Corlou from Vietnam

Starting next week on Monday, November 28 and until Friday, December 2, French chef Didier Corlou, once christened by the Bangkok Post as the ‘alchemist of spice’, is paying a visit to the kitchen of Thien Duong, Baan Dusit Thani’s stand-out Vietnamese restaurant, to spice things up.

One of the pioneering European chefs who remained in Vietnam post-war, chef Corlou has honed in his culinary expertise over a 30-year residency in the Southeast Asian country. Currently, the chef helms Hanoi’s revered Madame Hien restaurant while also flexing his wealth of culinary knowledge through Epices Corlou, a joint project with his brother exporting a variety of Vietnamese seasoning to Europe.

A match made in heaven, Corlou will be guest-shifting at Bangkok’s Thien Duong in one week. The traditional restaurant, nestled in Sala Daeng, serves Vietnamese creations with hints of French culinary culture. Hand in hand with the exquisite dishes, artisanal cocktails can be found by Thien Duong’s central bar. The interior design holds a mirror to the restaurant's bold character, emphasising the bridge between modern and antique elements, and is tastefully dotted with striking pieces of art.

A great opportunity for Bangkok foodies to experience chef Corlou’s innovative and authentic Vietnamese cuisine without having to book flights, highlights of the chef’s scintillating lineup will include duck prepared in three styles, served with green tea sauce and ripe mango. The classic pho dish makes an equally appealing case with a foie gras and lemongrass twist and, in a similar vein, the familiar Vietnamese spring rolls are spruced up with avocado, soft shell crabs, and asparagus stuffings.

The exclusive menu by chef Didier Corlou is available from November 28 to December 2, 2022. The three-course lunch set is priced at 750++ baht per person, while the five-course dinner is priced at 2,500++ baht per person. Advanced booking is required.
