Adirak serves some of the best pizza in Thailand, frequently overflowing with students who recognize premium ingredients and value for money. From sourdough to toppings the key takeaway here is consistency and quality. This is testament to chef Trirat “Boom” Roongsavadeja and his life partner, Yuwatee Jehko who, with no restaurant experience, have made Adirak, and its two newly opened branches in Chiang Mai, culinary gems. This first outpost is simply furnished with a gigantic, over- worked wood-fired oven dominating the petite open kitchen. One may sit on the outside terrace when weather permits; with a no-booking policy, that may of- ten be the only option. Order through QR code or scan the blackboard while taking in the kitchen drama. Every pizza tells a story, like fig and blue, showcasing juicy fresh local figs, punchy and rich Gorgonzola cheese, and prosciutto di Parma. Red hot chilli bacon is coated with a stellar smoked tomato sauce, mozzarella, generous bacon slivers, and hot honey. Combinations are innovative and may be tailor-made with a wide array of tasty add-ons. The menu has evolved to include other delicious bites, including deep-fried mushrooms, zucchini with blue cheese dip, meatballs, and homemade ricotta with shrimp. Dessert can be crème brûlée or burnt cheesecake – both made in house. The wine list offers appropriate choices to pair with the stunning pizzas.
At peak times, arrive early and be prepared to queue.
