Albricias, located within Chatrium Residence Sathon in the commercial heart of Bangkok, offers a tapas fest 12-course set culinary journey, curated by newly appointed executive chef David Aparicio. With over two decades of expertise in accoladed kitchens, chef David brings the rich traditions of Spanish gastronomy to life with a modern, playful twist. The dining experience begins with lightly flavourful Iberic fish, a combination of subtly smoked hamachi, and spicy mentaiko tartar, perfectly balanced with a touch of wasabi foam. To follow, ensaladilla de txangurro offers refreshing spider crab salad with creamy avocado mousse, enhanced with pickled chilli. Next, picture-perfect hand-chopped steak tartare served on a bed of beef marrow with piquant mustard mayonnaise and dressed with Baeri caviar. The more substantial arroz negro with carabineros and almejas in salsa verde boasts the rich depth of black ink paella paired with the sweetness of grilled carabineros and the fresh, salty notes of clams served on a vibrant green sauce. La carrillera, is tender slow-cooked beef cheek accompanied with silky truffle mashed potatoes, seasonal mushroom ragout, and green asparagus. The luxurious texture of the beef cheek contrasts the truffle and mushroom combination with an earthiness that blends perfectly. Round off with desserts, including Catalan cream with straw- berry ice cream or cocoa, almond dacquoise dusted with cinnamon and orange.
