Bimbo takes diners from the quiet streets of old town Bangkok directly into a buzzing summer’s evening on the Mediterranean. The decor and setting capture iconic snapshots of a Med summer; sandy walls, cactus plants, and an obligatory DJ dishing out Ibiza-style lounge beats. The latest brainchild of Ou Baholyodhin, this lively and playful eatery is one of the hottest spots for the city’s fashionable. Bimbo faithfully reinstates the carefree culture of living well combined with a dedication to great food; house-made breads use dairy products from France, flours from Italy, organic local eggs and learnings from organic bakeries. Pizzas are baked in a Moretti oven, try the black truffle, and salumi are sliced from a classic flywheel Berkeley slicer. Do like the Med natives and begin with tapas-style dishes of gambas picantes and cabbage wedge with roasted miso nduja butter, both highlights. Every aperitivo inevitably escalates into a full-blown meal, so continue with perfectly tender outside skirt wagyu served with punchy caper berry chimichurri and the Afrikaner chicken with salsa malibu. For pasta options, choose juicy vongole, or pesto gnocchetti with baby squid for something a little different. The drinks menu is concise with limited options but includes refreshing house cocktails to complement the meal. Finish with a splendid dark beer molten chocolate lava or selection of house gelato.
