Begin with a cocktail of chilli mango margarita to open the taste buds, as a prelude to a unique dining experience. For appetiser, choose grilled juicy lamb yakitori, stacked with chunks of vibrantly coloured peppers and onion strung together using a rose stem, or grilled scallops drizzled with chorizo curry sauce capturing the intended fusion flavour combination. Options include monkfish liver and tuna tartare with salmon roe or cumin-dusted chicken wings, whilst an extensive array of freshly cut premium sashimi is always available. Follow with perfectly executed Australian Angus striploin, the rare pinkness a testament to the kitchen, accompanied by slightly charred cloves of garlic and a piquant, buttery sauce blended with lime, chilli and coriander.
