Clara, a stunning tribute to contemporary regional Italian cuisine, opened its doors in leafy Yenakat in 2019, with chef Christian at the kitchen helm and his life and business partner Clara taking care of the front of the house. The Bauhaus building looks onto manicured lawns, and upon entering, and then throughout the meal, diners will experience the warmth exuded by this charming couple. The seasonally changing tasting menus are a joy to experience. The cuisine is a modern flavourful journey across Italy, showcasing premium Italian ingredients presented in exquisite creations. Picture-perfect aperitivos begin with wild mushroom with river prawn, chestnut with venison, and Pecorino with hay. Next is a melon and otoro tuna partnership accompanied by delicate olive oil sabayon—or, creamy Buratta with sea urchin, fennel and clementine, subtle yet complex. The pastas are exceptional, whether home-made tagliolini with white truffle, bottoni with lobster and cauliflower or spaghetti with tomato, oregano and garlic flower, they are executed flawlessly. Main courses of veal with eggplant, parmesan, aged balsamic and wagyu beef short ribs with celeriac, surrounded by a ribbon of Amarone-based sauce defy description, flavours lingering as one ponders the next delicious mouthful. Pairings have been curated by sommelier Edouard Marquis and deserve recognition.
