For pescatarians with an adventurous spirit, Cuisine de Garden is Eden. Both the 6 and 10 course experience menus are inspired by the new Nordic cuisine philosophy of fresh, local, seasonal, and sustainable produce. This fittingly rural-feel restaurant has an elegant wooden interior with leafy flora. An open kitchen with busy chefs preparing the delights enable you to watch the unfolding craftsmanship. Highlights might include seasonal mackerel with fresh local herbs lifting the smoked fish, finely balanced with the sweet and sour of a plum salsa. A wine pairing of a citrus Austrian Grüner Veltliner finely complimented. Kid-Heurat consists of a wonderfully complex combination of scrambled crab meat, pickled white turmeric root lending a sour edge, and Ceylon spinach flower with sesame oil completing the punch. Firm charcoal-grilled tiger prawns are served atop a bed of jackfruit purée, delicately fried aubergine slices with a turmeric and ginger vinaigrette finishing off an imaginative collaboration. The presented French chardonnay gives a buttery and flattering balance to the strong mid-menu dishes. Sweet marinated squid, infused with beetroot and chilli oil comes with phak wan, a local woody herb, in local rice and warm squid ink soup providing added earthiness. The final libation of a summery Portuguese red, blended to accompany seafood, shows this dedicated restaurant’s search for fine ingredients and creative sensations.
