Dining on the Rocks, the flagship restaurant at Six Senses Samui, stretches across ten terraces with weathered teak and bamboo tables in harmony with the resort’s philosophy to support a sustainable environment. Executive chef Kien Wagner has assembled set menus at varying price points, each a journey through Thai and international flavours. Organic ingredients are sourced from local artisan fishermen and farmers from across Thailand along with those grown on their nearby farm. Menu offerings include vegetarian, plant-based, and Taste of the Rock, a 6-course culinary extravaganza, all with bespoke wine pairings. Examples of the compositions include fresh rock lobster with pomegranate, pickled zucchini, Khao Yai vanilla in a delicately spiced red curry, or Thai bouillabaisse of fresh scallops, green mussels, locally grown herbs innovatively drizzled with plankton oil. Line-caught ocean fish is always available for mains, as is juicy Thai wagyu striploin. Within the Thai fusion menu, recommended dishes include tiger prawn with pink pomelo and tamarind seasoning and lamb massaman with young durian, peanut, and pumpkin. Finish your experience with a 72% Chumphon chocolate lava pudding with salted caramel ice-cream, a perfect combination of salt and sweet. An extensive global wine list includes many gems, and there is also a tempting offering of signature cocktails and mocktails.
