Alternatively, Caprese salad of vibrant vine ripe tomatoes with creamy buffalo mozzarella surrounded by ribbons of piquant basil pesto or one of several Caesar options, traditional or elevated with grilled chicken or succulent location-appropriate prawns. Creamy lobster bisque comes topped with delicate milk foam and crispy croutons. A multitude of main courses includes gourmet pizzas showcasing San Marzano tomatoes, premium prosciutto, Gorgonzola and Parmesan Reggiano, white prawns bathed in extra virgin olive oil and dialled-up with garlic and white wine to deliver an exceptional gambas al ajillo. Trademark hot pan dishes of New Zealand mussels with squid, prawns, scallops and spicy chicken cayenne are jammed with flavours. There is an exceptional range of Australian steaks, from tenderloin to ribeye, requiring a touch of kitchen magic to execute well, oyster blade and flank, both delivered to perfection. For sharing with friends, the trio of picanha, rump centre, and rump sirloin with a choice of sides and sauces. Earthy and fragrant mushroom truffle is a winner.
