It is perhaps surprising that the South American food trend has taken a while to take hold in Bangkok. Guilty now offers one of the liveliest hotel dining experiences in the city and the atmosphere, especially at weekends with a young crowd fuelled on pisco sour and horchata cocktails, is akin to a mini-fiesta. The Guilty brand originated not in Lima, Cusco or Mexico City, but in Lisbon, Portugal where a fun casual ethos packs in diners. The party-forward vibe prevails at this branch at Anantara Siam Bangkok, but the culinary palate dabs on a broad canvas that encompasses culinary creeds from across South America. Peruvian gastronomy is a focal point, and signature dishes such as yellow fin tuna ceviche, a combination of hamachi tuna with yellow tiger milk, the citrus-based marinade used to cure the fish in classic Peruvian ceviche, is executed to perfection. Another signature that hits with the force of the breaks on Peru’s Pacific coastline is lubina chilena y cartagena rice which features juicy roasted Chilean sea bass on a bed of rich Peruvian seafood rice in a tasty rockfish sauce. End the meal on a suitably decadent, guilty note with a serving of orange and lime churros or ice cream popsicles in three varieties: lychee-mint, mango-passion fruit and chocolate brownie.
Signature dishes abound, including luxe uni guacamole, but grade 9 wagyu picanha takes some beating.
