Inddee burst onto the Bangkok dining scene in mid-2023, garnering accolades in a very short time. Their latest menu offerings continue the journey in revolutionising Bangkok’s Indian culinary landscape with ever more innovative and complex dishes featuring premium ingredients and a healthy dose of drama. Sommelier Thanakorn “Jay” Bottorff’s beverage pairings now include an adventurous offering with sake, umeshu, Indian beer and Madeira alongside a more classic wine pairing. The iconic villa restaurant, known to gastronomes the world over, is now exploring new heights. One may choose to dine at counters and to directly engage with the kitchen team led by chef Sachin Poojary, or dine at a table on either level, the upper floor offering a more intimate setting yet well cared for by ever-present manager Felice Tavolario. Every dish, beginning with a trio of opening bites of an oyster, khari chai with pakoda and a theatrical chaat preparation tableside, will awaken the diner to new flavour combinations and palate sensations accompanied by narratives that engage and surprise. Highlights include carabinero elegantly charcoal-grilled in front of the diner, a unique foie gras and a main course of eel, named yesterday’s rice, which will linger long in the memory. Preceded by their reputation-enhancing rose falooda, the dessert finale of morel mushroom is inspirational.
