The à la carte menu begins with the story behind Loong Foong, which translates to dragon (yin) and phoenix (yang)—symbols representing perfect harmony and balance in Chinese mythology. Start with dim sum, such as crab meat and shrimp dumplings, crispy prawn rice noodle rolls, barbecued pork buns, or a comforting hot and sour soup. Continue with wok-fried pork with XO sauce or whole steamed snowfish with soy sauce. The dishes are prepared with great respect for tradition, and many diners come for the signature Peking duck—a stunning applewood-smoked duck, roasted until the skin is perfectly crispy, the meat tender and succulent, carved tableside, and served with pancakes, vegetables, and plum sauce. This is a prelude to the yin and yang contrasts that follow: first, wok-fried duck meat with sweet and sour sauce, followed by a wok-fried duck dish, generously cooked with chili peppers, Szechuan peppercorns, and drenched in mala sauce.
