Hailing from Chiang Mai, Chef Phattanant “May” Thongthong chose a villa in Samsen Nai to launch her fine dining restaurant, Maze. The building’s striking art deco architecture is complemented by a small garden leading to the chic dining room. One may dine at quaint tables or the countertop for a view of the meticulous assembly of dishes by the chef and team. Since opening in 2020, diners have been delighted with a variety of menu options including à la carte, seasonally changing tasting, and set lunch. The latter, featuring Northern Thai and Lanna heirloom recipes, offers authentic lesser-known dishes. The evening menu includes Western dishes, given Chef May’s subtle Thai touch. The tasting menu showcases the chef’s signature fusion style. Dishes include truffle and honey mustard pork bites, a slightly sweet appetiser complemented by pickled jalapeño, or akami and ikura salad, both vibrantly coloured ingredients, presented picture-perfect. Tom Yum bisque is a combination of rich Western soup, bursting with Thai flavours, a unique texture and flavour infusion. Thai-style angel hair with shrimp paste or mun goong strikes a perfect balance between the creamy and the aromatic. Or choose red snapper in zesty lemon bisque emulsion. Desserts reveal a penchant for French classics, perhaps crêpes Suzette, chocolate soufflé, or tarte tatin. There is a varied global wine list.
