Sa-Nga, located in the Centara Reserve on Koh Samui’s Chaweng beach, is the hotel’s signature Thai dining option for those wishing to enjoy small plates of traditional local Thai cuisine presented with a contemporary twist. Executive chef Christian Hinckley works with a team of talented Thai chefs to create an innovative menu of sustainably sourced ingredients from across Thailand. Dishes are typically garnished with local flowers and herbs. Begin with signature scallop in piquant red curry atop sweet roasted pumpkin, with a sprinkle of crisp basil or order succulent crab, in punchy Southern yellow curry with betel leaves. From the Northern-themed tasting menu, enjoy Thai wagyu sajin, a spicy tartare of tender beef combined with shallots, chili flakes, rice powder, and green apple, whilst topped with a quenelle of caviar. Chiang Mai pork sausage is accompanied by perfectly crispy pork skin, adding another textural dimension. Modern takes succeed, as with tom yum soup with young coconut and tiger prawn finished with a stylish cappuccino, rich in flavour and light and fluffy. Lamb loin is inventive in a yellow curry with noodles, the sauce supercharged with a generous helping of burrata, adding a rich layer of complexity. For dessert, choose pumpkin crème brûlée for a simple, perfectly executed, on-brand finale.
