Classic dishes are elevated with modern twists, such as tom kha gai (coconut milk chicken soup), which is enhanced by the addition of jackfruit seeds, bringing a creamy, fruity, and herbal complexity. Thai fish cakes, or thod mun pla, are transformed with the addition of salted egg (khai kem), offering a delightful new dimension. Among the main courses, a curry inspired by Chef Montri Jiratitikankit’s mother features free-range chicken, tamarind juice, roasted herbs, banana blossom, and coconut milk. Gaeng run juan neua, a fiery beef curry with shrimp paste, onions, and hot basil leaves, delivers bold, authentic flavours.
