31 Degrees is the brainchild of the founders of Kad Kokoa artisan Thai chocolate, Khun Paniti and Khun Nuttaya. Having established their unique craft chocolate in many luxury hotels and prestige restaurants across Thailand, they partnered with the Bocuse d’Or Thailand team to launch Asia’s first cacao bistro. The name stems from the critical temperature required to temper dark chocolate. The comfortably furnished and charming two-level bistro is overseen by the effervescent French COO of Kad Kokoa, Leo Sebag.
The menu offering includes an a la carte menu, daily specials, and a super value set lunch. Core dishes are bistro classics, tasty tartines, light appetisers, traditional main courses, and tempting desserts. However, hidden within these competently executed French staples are several signature gems given a Kad Kokoa twist. Recommended are the caesar salad with cacao butter and the mouth-watering “Devil May Cry”, an organic egg delicately wrapped with ham and gouda in soft bread—gooey, moreish, and surrounded by an elegantly balanced sauce of barbeque and Chantaburi single origin chocolate.
