Offering a bright interior at lunch, and a slightly more formal ambience in the evening, Chef Phubase launched Aquila almost two years ago offering his brand of European dining with Asian touches embracing the motto, "eat good, feel good." Begin with an appetiser of refreshing, creamy burrata salad, showcasing juicily sweet, Chiang Mai tomatoes, Japanese melon and pickled peach, drizzled with olive oil and piquant balsamic. Alternatively, choose any of the tapas platters, from a delicious mini wagyu sandwich to an innovative foie gras nam pla waan dressed with a surprising combo of mango and Thai fish sauce. A tempting Italian section of pastas and risottos should not be ignored. Here Chef Phubase excels, whether a comforting mac and cheese prawns, his renowned homemade delicate dumplings of truffle gnocchi or a creatively executed eel and scallop risotto. Mains offer the delights of a grilled, honey and garlic pork chop or lamb rack accompanied by gorgonzola spring rolls. Desserts are a continued treat with several Italian classics, including a signature coconut pannacotta, cleverly blended with local mango and caramelized pineapple. The drinks on offer include an extensive number of house-mocktails, hot and iced local coffees and a concise and eclectic wine list.
