Thai-Indian chef and restaurateur Chalee Kader has been known for a number of successful culinary ventures in Bangkok over the years, and his latest project to capture the heart of foodies and critics, is 100 Mahaseth, a Michelin Bib Gourmand establishment. A shrine to the fiery flavours of Thailand’s northeastern Isaan region, 100 Mahaseth is also a vehicle through which Kader showcases his vision of sustainability in F&B. Focusing on waste reduction, Chalee’s nose-to-tail menu makes sure no part of an animal goes unused, in line with traditional but often forgotten Thai dining practices. Although challenged by the effects of the Covid-19 pandemic on the hospitality industry, Chalee remains steadfast in his dedication to his craft, his staff, and his ongoing mission to push Thai cuisine to new heights in a sustainable manner. His latest ventures–Wana Yook fine dining restaurant and Fran’s Brunch & Greens, Mickey’s Diner, not to mention Holy Moly English pies–are at the top of Bangkok foodies’ check-in list.
